The best Soft Chocolate Chip Cookies + Double Chocolate Chip Cookies

Hello everyone,
How are you doing today?
It's been awhile since I wrote a post.
Today I am going to share two cookie recipes that I have recently made. The first recipe is

The Best Soft Chocolate Chip Cookies.
8 tablespoons of Salted Butter
1/2 cup white sugar
1/4 cup packed light brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chocolate chips

Method
1. Preheat the oven to 350 degrees. Microwave the butter for about 40 seconds to just barely melt it. It shouldn't be hot - but it should be almost entirely in liquid form.
2. Using a mixer, beat the butter with sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated - 10-15 seconds.
3. Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large bowl that is easy to handle. Add the chocolate chips and incorporate with your hands.
4.Roll the dough into 12 cookies (or 9 HUGE cookies) and place on a cookie sheet. Bake for 9-11 minutes until the cookies look puffy and just golden. DO NOT OVER BAKE.
5. Let them cool on the pan for 30 minutes or so. And Enjoy!
NOTES: 1. To make the cookies a little more soft and chewy, I used 1/2 cup of honey Instead of white sugar.since I replaced the honey with the white sugar, I found that you need to add more flour depending on how it looks. 2. Depending on how big or small you like your cookies, you can change the size. 3. The recipe calls for 3/4 cup chocolate chips, but when I put chocolate chips in my cookies I go more by feel, and how much I want.

The second recipe is Double Chocolate Chip Cookies. I have made these cookie a couple of times. The last time I made these cookies I changed them up a bit.

Double Chocolate Chip Cookies
1 cup butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
3 Tbsp cocoa powder
1 1/2 package chocolate chips

Method
Bake at 350 degrees for 8 minutes. when they come out of the oven they should be soft. Let them cool for about 10 minutes (or as long as you can wait.)
NOTES: 1.With this recipe I also replaced the white sugar with honey. I used 3/4 cup of honey. with adding more liquid, you will have to add more flour depending on how your dough looks and feels.
 2. Chocolate chips also can be depending on how much or how little you like.
