Snickerdoodle Muffins

On Wednesday evening i had no homework. i was bored so i decide to make something, so i went online to find a recipe.  I first looked up recipes for different cookies, but i didn't feel like making cookies so i thought i would make muffins. i didn't want to make the boring chocolate chip muffin, so i looked for different muffins. i found this recipe for Snicker doodle muffins.
these are suppose to be mini muffins, but i made then normal sized muffins.





Recipe

Topping

1/3 cups Granulated sugar

1 Teaspoon ground cinnamon

Muffins

1 1/2 cups all-purpose flour

1 cup quick-cooking oats or 1 cup old fashion oats, uncooked

1/2 cups granulated sugar

1 tablespoon baking powder

1 cup milk

1 egg, lightly beaten

4 tablespoons margarine or for tablespoons butter, melted

1 cup mini chocolate chips (optional)

Method

Heat oven too 400 degrees F spray bottom only of mini muffin pan cups with cooking spray.

for topping, combine sugar and cinnamon in a small bowl; mix well and set aside.

For muffins, combine flour, oats, sugar and baking powder in a large bowl; mix well. in a small bowl, combine milk, egg, margarine and vanilla; mix well. add to dry ingredients all at once; stir just until dry ingredients are moistened. don't over mix! then mix in your chocolate chips.

Fill muffin cups two-thirds full. sprinkle topping evenly over to of the muffins.

Bake for 12-14 minutes or until light golden brown. cool muffins in pan or wire rack for 5 minutes; remove from the pan and serve warm.

Note: To prepare regular sized muffins, line 12 medium muffin pan cups with baking cups or spray the bottoms of the pan with cooking spray. prepare muffin batter as directed above. fill muffin cups almost full. sprinkle with topping. bake muffins for 18-20 minutes or until light golden brown. cool muffins in pan or wire rack for 5 minutes; remove from pan and serve warm
**since i made these medium sized used normal sized chocolate chips instead of mini chocolate chips.**
